Olio Nuevo is here! Olio Nuevo or "New Oil" is a seasonal oil that comes straight out of our mill and into bottles without settling or filtration. Some olive oil companies choose to filter their oil which removes any residual olive fruit sediment left over from the milling process. Our oil is unfiltered so to get the olive fruit sediment out we have to let the oil settle. This usually takes 4-6 weeks. Fresh out of the mill our oil is a beautiful bright green color with a cloudy appearance (Olive Fruit Sediment). It's incredibly delicious and flavorful.
The olive fruit sediment in the oil, however, does cause the oil to have a much shorter shelf life. Where our settled oil has an estimated shelf life of 24 months from the press date, our Olio Nuevo is about 6 months. Best used generously on everything!
